What's the deal with an employer's health insurance?

If my first career move is to open up 3 food franchises in Las Vegas (two Auntie Anne's and a Dippin' Dots; possibly an applebees later on) I am considered an employer, right? cause i'm hiring college students or part time employees. How does MY health insurance work? if i'm single, what would be an annual estimate of a great plan? And do I have to pay for any of my employees health insurance?

If you have employees you are an employer. Doubtful you can run all these businesses yourself. You'll need to call around and get quotes for your health insurance. Terms and premiums vary greatly. You do not have to provide health insurance for your employees. Typically those types of businesses do not provide insurance except possibly for managers. It is your choice.
