I go to Bloomsburg University. If I switch from full time to part time, I will no longer be on my mom's health insurance plan. If in the fall I switch back to full time, will I be put back on her insurance???

It depends on her plan. Sometimes you can be reinstated; other plans may not. Have her check with the administrator of the plan.
