Once diagnosed with cancer, how difficult is it to change employers & obtain new health insurance?

Also, once diagnosed can you increase your life insurance coverage?

As a clarification to "Deep's" answer, your previous health insurance must have been group-based and not have been lapsed for more than 63 (not 60) days. There is no requirement that your previous group health insurance have lasted 2 years; typically, in a group health insurance situation, the pre-existing exclusionary period isn't more than 6 or 12 months (depending on the circumstances), so that's all the previous "creditable coverage" you need to cancel it out. Employers have no right to know your health history prior to, or after, your hire. Also, group life insurance typically will provide a dollar amount of insurance an employee qualifies for without having to provide "evidence of insurability." Above this amount, you will have to provide details regarding your health history. Most insurers to not set a "5-year limit" on cancer patients before they qualify for insurance. Because all types of cancers are different, and because cancers have different stages of progression within an individual, it's not accurate to state there's one time limitation that applies to all patients. A person who had stage 1 basal cell carcinoma, fully excised and fully healed, will become insurable much sooner than 5 years. However, a person who had oat cell carcinoma of the lung, stage 2, may never be insurable.
