How long do you have to be at a job before you can leave and get COBRA continuation on your health insurance?

I am miserable at work, but I would like to be able to keep the insurance, even though I'll be paying more for it. I've had insurance coverage from the very first day, if that makes a difference.

There's no minimum time limit. As long as your employer is subject to Cobra, and you had coverage in force the last day you worked, you can elect Cobra coverage. I'm glad you're aware that you'll be paying more for it - the average Cobra cost for an individual, is $350 a month.
