Just out of curiosity, I am on my mom's insurance plan - if I fill a prescription on her insurance, would it be listed on a bill or report for her or something?

Well, the insurance company won't send out an "explanation of benefits". But if she requests a copy of all prescriptions filled for tax purposes at the end of the year, it will be on that list. You can always fill that prescription and pay cash, without using insurance.
